 Recipe: Courgette, Potato & Cheddar Soup


  • 2 courgettes (zucchini), chopped
  • 2 medium-sized potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup grated cheddar cheese
  • 1/2 cup heavy cream (optional)
  • Salt and pepper to taste
  • Fresh herbs for garnish (such as parsley or chives)


  1. In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become fragrant and translucent.
  2. Add the chopped courgettes and cubed potatoes to the pot. Stir and cook for a few minutes until they start to soften.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the vegetables are tender.
  4. Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
  5. Return the soup to the pot and stir in the grated cheddar cheese until it melts and combines with the soup.
  6. If desired, stir in the heavy cream to add richness to the soup. Season with salt and pepper to taste.
  7. Simmer the soup for a few more minutes until it is heated through.
