Recipe: Courgette, Potato & Cheddar Soup
Ingredients:
- 2 courgettes (zucchini), chopped
- 2 medium-sized potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup grated cheddar cheese
- 1/2 cup heavy cream (optional)
- Salt and pepper to taste
- Fresh herbs for garnish (such as parsley or chives)
Instructions:
- In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become fragrant and translucent.
- Add the chopped courgettes and cubed potatoes to the pot. Stir and cook for a few minutes until they start to soften.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the vegetables are tender.
- Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
- Return the soup to the pot and stir in the grated cheddar cheese until it melts and combines with the soup.
- If desired, stir in the heavy cream to add richness to the soup. Season with salt and pepper to taste.
- Simmer the soup for a few more minutes until it is heated through.
- Serve the Courgette, Potato & Cheddar Soup hot, garnished with fresh herbs of your choice.
