Recipe for Baked Salmon with Roasted Vegetables

  • 4 salmon fillets
  • 1 pound of mixed vegetables (such as carrots, broccoli, bell peppers, and zucchini)
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried herbs (such as thyme, rosemary, or dill)
  • Salt and pepper to taste
  • Lemon wedges for serving

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Prepare the vegetables by washing them thoroughly and cutting them into bite-sized pieces.
  3. Place the mixed vegetables on the prepared baking sheet. Drizzle with olive oil and sprinkle with dried herbs, salt, and pepper. Toss the vegetables until they are evenly coated with the oil and seasoning.
  4. Push the vegetables to one side of the baking sheet, creating space for the salmon fillets.
  5. Season the salmon fillets with salt, pepper, and a drizzle of olive oil. Place the fillets on the empty side of the baking sheet, skin-side down if they have skin.
  6. Bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and the vegetables are tender. The cooking time may vary depending on the thickness of the salmon fillets.
  7. Once cooked, remove the baking sheet from the oven and let the salmon and vegetables rest for a few minutes.
  8. Serve the Baked Salmon with Roasted Vegetables hot, garnished with lemon wedges for a fresh citrusy flavor.

Enjoy your delicious and healthy Baked Salmon with Roasted Vegetables!
